Potatoes-au-gratin with ham

1 kilogram / 2.2 lbs new potatoes
1 onion
3 scallions
120 grams / 4 oz. grated Cheddar
120 grams / 4 oz. grated Gruyere
240 grams / 8 oz. cubed smoked ham
1 cup whipping cream
1 tsp paprika powder
1 tsp mustard powder
salt & pepper
3 tbsp olive oil

Wash the unpeeled potatoes and thinly slice them. Peel and chop the onion and scallions and sautee them in the heated oil till light brown.

Put a layer of potato slices in a non-greased oven dish. Sprinkle half of the ham, cheese and onions on it, add another layer of potato slices and the remainder of the ham and cheese. Add more layers if you wish.

Pour the cream in a saucepan and add the paprika and mustard, with a few shakes of the saltshaker and a bit of pepper. Heat the cream below boiling and pour it over the potato-ham-cheese dish.

Put in a preheated over at 215ºC / 425ºF and bake for 45 minutes.
